Fred & Ricky’s take on classic lasagna where whole wheat noodles are layered with a rich, chunky tomato sauce, earthy sun dried tomatoes and a mushroom, zucchini, onion, tofu mixture that provides plenty of non-cheesy richness.
MICROWAVE: Remove lid and rest atop dish. Cut lasagna in half and separate in the middle. Heat on high for 2.5 mins. (If frozen, 5 mins.) and stir sauce. Cook another 2.5 mins. (If frozen, 5 mins.) or until it reaches desired temperature.
OVEN: Preheat oven to 375° F. Remove lid. Cover pan with foil and cook for 50 mins. For food safety, cook thoroughly to 165° F. Let sit 10 mins. before serving.
