Back-To-School Plant-Based Lunchbox Tips

It’s hard to believe summer is almost over! It’s that time of year again when all the kids go back to school, and we all know how stressful it can be to gather the required supplies and readjust to the changes in schedules.

Along with getting the kids and yourself to school and work on time, helping with homework, and figuring out who’s going to pick up the kids from their after-school activities, there’s also having to make sure everyone has a healthy lunch.

With a few tips and tricks, you’ll be able to pack your kids or yourself a plant-based lunch every morning with ease.

  • Find a routine you can stick to. Get back into the groove of the school schedule. Find out if you like packing lunches the night before or the morning of. If you’re a busy bee, making lists is a huge help! You could also try to get the kids to pitch in. Once you get used to packing a plant-based lunch every day, your mornings won’t be as crazy.
  • Use a variety of sizes of containers. Having plastic containers around the house makes it much easier and quicker to throw food in a lunchbox. Not to mention, they are reusable. Having different sizes can help you create the right sized portion with a healthy balance of fruits, veggies, legumes and grains. Another idea is to use a Rover lunchbox. It has 5 compartments within the lunchbox and holds 4 ½ cups of food. The separate compartments help you pack the perfect lunch with veggies, fruit, protein, and a starch.
  • Meal plan. Come up with a list of several lunches at the beginning of the week. Make a weekly calendar and put it on the fridge. This will cut the time making lunch in half! Some great lunch ideas include hummus, soups, quinoa, pasta and sandwiches.
  • Work in batches. If you’re busy on most weekdays, batch cooking can be extremely helpful. If you have time at the beginning of the week or during the weekend to fit in some kitchen time, use it. Prepare batches of dips, soups, baked goods and snack bars. You can also cook all the rice and beans you think you’ll need for the week. This will make packing lunches easy peasy!
