People adopt a gluten-free diet for many reasons. Concerns surrounding celiac disease, weight gain, wheat allergies and gluten sensitivity lead the way. In fact, the percentage of consumers avoiding gluten more than tripled between 2009 and 2014*.
Those who’ve adopted a gluten-free diet are well aware that gluten-free food can taste quite different. This is because gluten is a spongy complex of proteins found in wheat that allows dough to rise, which gives breads and cakes their texture. It’s used to make pizza dough stretchy, it gives bread a spongy texture, and it’s used to thicken soups and sauces. As a result, foods without gluten can have a different texture and taste.
But does gluten-free have to mean flavor-free? To Fred and Ricky’s, absolutely not.
