Introducing Fred & Ricky

Welcome to the Fred & Ricky website and blog! We’re excited to bring our plant delicious foods to the St. Louis area and can’t wait for you to fall in love with Fred’s delicious recipes. In our first post here, we want to share with you a bit more on our history and how the idea for Fred & Ricky’s came about.

Ricky (Rich Waidmann) comes from a family with a long history of heart disease. Seven years ago, he went on a plant-based (no meat or dairy), no oil diet, and now is no longer at risk of a heart attack! His doctor recommended this change based on the groundbreaking medical study outlined in a book by Dr. Caldwell Esselstyn titled “Prevent and Reverse Heart Disease.” Dr. Esselstyn conducted a 20 year medical study where he took very sick heart patients and was able to reverse their heart disease by having them eat a plant-based, no oil diet. His research was one of the main subjects of the documentary “Forks Over Knives.” (If you haven’t seen it, it’s worth watching!) Numerous other studies have been conducted since then, showing similar benefits to prevent and reverse diabetes, hypertension, obesity, and many forms of cancer.

Ricky met Fred (Kathleen) five years ago. She is a fabulous cook and wanted Ricky to eat better tasting food that fit within his diet. She tried plant-based recipes, but found that they weren’t very good and tasted pretty bland. So she took her family recipes and began experimenting to recreate them without meat or cheese. The results have been nothing short of amazing! Fred & Ricky began feeding the recipes to their family and friends – oftentimes without telling them beforehand. They all said amazing things, including college-age kids. Go figure!

After a lot of prodding from friends and family, Fred & Ricky decided to start Fred & Ricky’s Plant Delicious Foods. Their goal is to make food more sustainable for our planet and help rid the world of preventable diseases. The food is made fresh daily in small batches, and the ingredients are sourced from local and organic farms whenever possible.
