Meet the Team – Jessica

Meet Jessica Schmidt! She has a passion for nutrition and diverse experience in culinary arts. Continue reading to learn more!

Tell us about yourself and your background. Where were you before Fred and Ricky’s?

I’m actually from California and received my Associate Degree in Culinary Arts from Le Cordon Bleu. While I was in school, I got the opportunity to work with renowned chefs like Wolf Gang Puck and Chef Stone, and I worked for the Golden Globe Awards. I worked in pastry and culinary. Really, wherever I was needed. It was awesome!

I moved on as a culinary intern at Walt Disney World for 9 months, where I met my husband. We then moved to St. Louis and I worked at St. Claire Hospital for 4 years. This peaked my interest in healthy cooking and I wanted to learn more about nutrition and specific diets.

I was looking around and Fred and Rick’s came up. I’m going back to school here to get my Associates in Dietetic Technology Nutrition, so I thought the transition to Fred and Ricky’s was perfect for me. I wanted to make nutritional food that also tastes good!

What do you enjoy doing most outside of work?

A lot of my time outside of work is dedicated to school, but my favorite hobbies are hiking and baking. Both are very soothing to me. I’m also interested in getting involved in volunteering and gardening.

How did you know that Fred and Ricky’s was the right place for you?

Fred and Ricky’s is not a negative environment, which definitely effects the way you cook in the kitchen. Everyone here is very passionate about what we’re doing, and I feel like I’m a part of something that matters. I think many people look for that in a job, and I’m one of the lucky ones.

What excites you most about your role with Fred and Ricky’s?

I love learning new cooking and baking methods, especially for pastries and Mexican food, without using dairy, meat or oil.

I also love that everyone here is part of the same team, and we’re working together to work towards the same goal. To provide the community with healthy, sustainable plant-based food that tastes good.
