The first thing you’ll notice is that Fred isn’t a dude. Fred’s a she. Fred & Ricky’s is the creation of husband and wife team Kathleen Kimmell Waidmann (aka “Fred”) and Richard (aka “Ricky”) Waidmann.
Fred grew up on a working farm in rural Indiana, where her family grew corn, soybeans, tomatoes, cantaloupes, and watermelons. A lifelong food lover and exceptional cook, Fred created these recipes after Ricky was diagnosed with heart disease and told to adopt a plant-based, no-oil diet by Dr. Caldwell B. Esselstyn, author of the best-selling book How To Reverse & Prevent Heart Disease featured in the documentary “Forks Over Knives.”
After trying many plant-based recipes that all tasted bland and like cardboard, Fred began experimenting with her great-tasting family recipes and replacing the meat, dairy and oils with low-fat, whole-food, plant-based ingredients. In order to deliver the same rich, savory flavors we’re all accustomed to, Fred has spent thousands of hours developing unique cooking techniques to make entrees, soups and desserts that both plant-eaters and meat-and-cheese-eaters will love.
They are delicious, nutritious, and aimed at helping protect people from heart disease and other illnesses linked to a traditional “Western” diet made up of meat, dairy, sugar, salt and preservatives.
