For nearly two years, Ricky endured a low-fat, whole-food, plant-based diet made up of food that was bland and tasteless. Then he met Fred.
At first she tried to use plant-based recipes, but they often tasted bland or sometimes just plain awful. So she started taking traditional dishes and modifying them to adhere to a whole-plant, no oil diet. In order to deliver the same rich, savory flavors that we all crave, Fred began developing unique cooking techniques to make low-fat, whole-food, plant-based, no oil foods have real flavor and richness.
It wasn’t just the cooking techniques but the ingredients themselves that had to be carefully chosen for freshness and flavor. The combination of the small batch, made from scratch techniques and the very best ingredients ensure rich, savory food comes out of Fred and Ricky’s kitchen.
The foods we eat should nourish our body and help us avoid disease. They shouldn’t make us sick.
Unfortunately, a typical Western diet made up of meat, dairy, and refined foods does just the opposite. According to the World Health Organization, approximately 1/3 of cancer cases are preventable, and meat and dairy consumption have been linked to lung, breast, prostate, ovarian, colorectal and prostate cancers. A 12-year study done at the Cleveland Clinic found that a low-fat, whole-food, plant-based diet could prevent and reverse heart disease. And in 2013, the US National Institute of Health published an article about the health benefits of plant-based eating. The article stated that:
“Concerns about the rising cost of health care are being voiced nationwide, even as unhealthy lifestyles are contributing to the spread of obesity, diabetes, and cardiovascular disease. For these reasons, physicians looking for cost-effective interventions to improve health outcomes are becoming more involved in helping their patients adopt healthier lifestyles. Healthy eating may be best achieved with a plant-based diet, which we define as a regimen that encourages low-fat, whole-food, plant-based foods and discourages meats, dairy products, and eggs as well as all refined and processed foods. We present a case study as an example of the potential health benefits of such a diet. Research shows that plant-based diets are cost-effective, low-risk interventions that may lower body mass index, blood pressure, HbA1C, and cholesterol levels. They may also reduce the number of medications needed to treat chronic diseases and lower ischemic heart disease mortality rates. Physicians should consider recommending a plant-based diet to all their patients, especially those with high blood pressure, diabetes, cardiovascular disease, or obesity.
It seems that every food company is talking about sustainability these days, without explaining how or why they’re sustainable. It’s just a buzzword to them. To Fred & Ricky’s, it’s the heart and soul of what we do.
Plant-based eating isn’t only the healthiest way for people to eat. It’s the only sustainable way for us to feed the world’s population without destroying our planet and our health. Using land to grow plants to feed animals, which are then fed to people, is highly inefficient. In terms of water and crop usage, a cow will drink approximately 683 gallons of water to produce 1 gallon of milk, and it takes 2,400 gallons of water and up to 10 pounds of grain to produce just 1 pound of beef. Conversely, producing 1 pound of tofu requires almost 90% less water (244 gallons of water), and less than ½ pound of soybeans (95% less grain). In the US alone, 56 million acres are used to grow crops to feed animals, and just 4 million acres are used to grow plants to feed people.
Raising animals to be fed to people also causes significant pollution worldwide. A staggering 51% or more of greenhouse gasses are caused by animal agriculture according to the Worldwatch Institute. According to the US Environmental Protection Agency, animals raised for food in the United States produce more than 500 million tons of waste each year, which is more than the entire human population of the US. But unlike humans, there are no toilets or sewage treatment plants for animals. Runoff from raising animals for food is one of the top causes of pollution in lakes and rivers, and has been shown to cause a range of illnesses including immune and neurological problems in those exposed.
The only sustainable way to feed the population of our planet is by eating a diet made up primarily of plants.
