Fred Beans & Brown Rice is our healthy twist on Red Beans & Rice, a Louisiana Creole favorite traditionally made with pork. In order to give Fred Beans & Brown Rice a rich savory taste without meat, Fred uses a unique blend of vegetables, herbs and spices cooked together slowly for hours, served over a bed of brown rice, and topped with a spicy Sofrito garnish to create one of our most popular dishes. Making great tasting plant-based, no-oil Mexican food is really hard! But Fred did! Her Enchiladas use three kinds of mushrooms, ground walnuts and warm spices that are rolled inside corn tortillas before being topped with a savory tomato sauce scented with chili powder, cumin and garlic.
