Making great tasting plant-based, no-oil Mexican food is really hard! But Fred did! Her Enchiladas use three kinds of mushrooms, ground walnuts and warm spices that are rolled inside corn tortillas before being topped with a savory tomato sauce scented with chili powder, cumin and garlic.
